FAT-FREE FETTUCINI ALFREDO

INGREDIENTS:

1 can evaporated skim milk
1 tsp. cornstarch
8 oz. fat-free cream cheese
1/2 lb. sliced mushrooms
6 scallions, chopped
1 lb. fettucini noodles
Salt and pepper to taste


DIRECTIONS:

Sautee mushrooms and scallions in a non-stock skillet, set aside.
Mix 1 tsp. cornstarch and 1 tsp. skim milk in a non-stick saucepan.
Add the rest of the skim milk and bring to a boil.
Lower heat to medium and slowly add the4 cream cheese, stirring constantly.
Simmer mixture until thick.
Add salt, pepper, mushrooms & scallions.
Cook fettucini according to package directions.
Toss cooked noodles with sauce.
